Should I use 2 self-employed returns to file my employment income and my wife's self-employment returns together? Or can I use different products to file them together?

I have moderate employment income between $50-60k and my wife with almost $0 since it's a start up business operating for just a month in 2021.

If you prepare your return together with your spouse in TurboTax Online, then you will both will be using the same version of the program, and you will both be charged the same price. You can only prepare your returns in different products if you prepare your returns separately.
